7 nov 2011: eet meer groenten perslunch
since 2009 the vegetable chef frank fol and gault millau organize the yearly election the best benelux vegetable restaurant.
on november 7, 2011, the new winners of the award 2012 will be announced during the presslunch at ‘t aards paradijs, nevele-merendree.
last year this award is received by both ‘t aards paradijs and de culinaire werkplaats. to our regret we are not allowed to defend the title. but lieve lootens (‘t aardse paradijs) and eric meursing (de culinaire werkplaats) will together with frank fol and wim ballieu (alfin) taking care of the press luncheon.

sept 28 – oct 29, 2011: de stad in 5 gerechten
in october city life will be blooming like always, also at de culinaire werkplaats. living in a city and our love-hate-relationship with amsterdam are the inspirational triggers for the dinnerspecial the city. we picked 5 metropolitan issues which we translates to a city walk in 5 dishes.
ever tasted how special a moment of ‘urban quietness‘ is? believe it or not, but for the first time of your life you will be asking for more ‘nuisance‘ as this dish is surprisingly moreish. we also have interpreted two green urban themes to the dinnerplate: urban farming and urban nature. as finishing touch you can enjoy a spicy blend of ingredients representing a typical amsterdam neighbourhood.

sept 26, 2011: puur workshop voor restaurants
what started as the fair trade restaurant week has become the puur restaurant week, and this year the event is held from November 14-20, 2011.
participating restaurants offer during this week a menu in which the ingredients are organic and/or fair trade. if fish is part of the menu, this should be sustainable: (MSC certified or www.goedevis.nl).
if you want to join and/or want to know where organic and fair trade products and sustainable fish are available. or if you want to know more about organic, fairtrade and /or sustainable seafood, or if you need inspiration, you are welcome at special inspiration workshops for the hospitality branch.

15 aug – 24 sept 11: dutch waters
after our summerbreak and fully inspired by a rainy july we kick off in august with one of our most favorite themes: water. we translated this theme to 5 lovely waterdishes that take you on a adventurous journey through water and food. so you’ll have the opportunity to bite in a piece of dune water. you can learn all about the hidden but tasty talents of buoys or enjoy spoons full of a blooming pont. furthermore you’ll find two of our legendary water classics on the menu, but with a fresh twist: waterworks and swan lake. we completed the eat’inspiration with the matching cocktail wishing well and the aperitif cleopatra’s tears. meer…
hip & hot: valentijn gerechtjes

hip & hot magazine invited us to create some valentine dishes for their january issue. the result: the following three dishes, in which the colour of love & warmth is leading:
- love = comfortable but slightly different: bitterbal with a filling of red cabbage stew on a salate of marinated red cabbage with a few mushrooms.
- love = sharing everything: long pasta ribbons with a ‘pesto’ of red beets, walnuts and dill.
- love = warmth: chocolate bonbons with a filling of marinated pears and a sirup of red port.

the focus of this year’s nationale kookstudioweek.nl is on vegetables and fruits.
as de culinaire werkplaats is specialized in food & eating concepts in which vegetables & fruits are leading ours chefs want to contribute to this initiative.
if you want to learn more about cooking with fruits & vegetables it’s very handy if you can chop your vegetables smoothly.
what. mini workshop ‘learn to chop vegetables like a chef’. you will learn recognize/work with various knives (like an office knife, chef’s knife, mandolin), to cut julienne & brunoise and last but not least how to chop an onion. and thereafter it’s just a matter daily practice.

mei 2011: jus de V – test
in may 2011 we introduced our jus de V to the public at fabulous food festival in haarlem. the reactions were overwhelming. jus de V is a rich vegetable jus without any animal ingredients and available at de culinaire werkplaats in the second half of september 2011 in a glutenfree version.
