amsterdam rainproof projects

during the eat’inspiration water matters? (june-july 2015) we addressed various water related issues in order to illustrate the importance and essence of water. water X food are very much connected:

  • the production of foods/ingredients takes a lot of water;
  • the preparation of food consumes a lot of water;
  • we -human beings- need a lot of water, as we exist mainly of water.

ever since 2010 -the year we won an award with our 1st water eat’inspiration- we design every year a water eat’inspiration. each year we approach the theme from a different perspective.

eat’inspiration water matters.

this year we created the following 5 water inspired edible stories and 3 small installations.

  • wishing well. we created a wishing well for our guests. the notion of wishing wells is found in  european folklore to describe wells where it was thought that any spoken wish would be granted. the idea that a wish would be granted came from the idea that water housed deities or had been placed there as a gift from the gods, since water was a source of life and often a scarce commodity.
  • amsterdam rain proof. cities like amsterdam are experiencing a lot of pressure on their central sewage system due to the heavy rainfall we have nowadays. the amsterdam rain proof projects try to keep the water to the buildings with vertical gardening, rooftop gardening or rooftop urban farming. this inspired us to the dish on the above image.
  • strand line (flood mark). this dish was inspired by the temporary landscape/line, especially of washed-up seaweed or other debris, marking the previous high water lever along a shore.
  • waterworks. we told this story with a “wet” dish in which spicy watermelon was starring together with mint. so this is not about shedding tears, but about the fact that the dutch are known for their water works. and if we would not be great at this about 30 to 50% of our country would be under water.
  • underwater. so underwater life was the source of inspiration for our last and sweetish dish. we created some edible koi made from strawberries and some environmental aspects. we presented this dish in a plastic bag (just like you buy a goldfish for your fish tank at your local pet shop) to address the problem of plastic and the ocean.

august 2 – 17, 2015: in between themes

restaurant section closed

in the first 2 weeks of august 2015 the restaurant section of studio de culinaire werkplaats is temporarily closed. as for the upcoming theme vincent van gogh we will be changing the interior and the way we will be presenting our eating experiences.

we will also extend our opening hours during the upcoming theme. all the details, start date and what to expect during the eating experience vincent will be published on our website in the first week of august at the latest.
