july 10, 2015: trendXchange talk @ the hoxton amsterdam

we were invited by cécile poignant, trend forecaster and editor of the online platform trendtablet.com, to join as a panellist TRENDxCHANGE breakfast talk at the hoxton hotel amsterdam on july 10th, 2015. this gathering was all about food, trends and the future.

the event. cécile poignant presented the future of food by distinguishing and explaining 4 main food trends (roots, farming, erotic, hybrid). after her presentation she moderated a panel discussion about food and trends. the panellists were gerard (sous chef of the soho house), liza chloë van duyn (creative at marie stella maris), and the both of us (marjolein wintjes & eric meursing of de culinaire werkplaats).

the food. the guests were welcomed with a great breakfast offered by the hoxton. and we created a small tasting at the end of the event. we created some edible flowers of strawberry paper, beetroot breakables with apple foam, and dark chocolate with black olive pearls.

trendtablet.com is an online resource/tool which explains how trends grow, evolve and flow. trend tablet is now going offline in various cities in the world (new york, berlin, amsterdam, etc.). the events, called TRENDxCHANGE, are all about looking forward in the attempt to understand the world which we will be living in tomorrow. and are all inspired by the local area. in amsterdam trend tablet teamed up with the hoxton for the offline happenings.
