we are very pleased to share with you the status of our new venture ‘project space: the storage room‘.
after facing a lot of red tape and the usual setbacks we finally tackled the most important hurdle. at last our contractor realized the opening between our studio/restaurant and our new art gallery. this created some uneforeseen problems ……..
a lot of re-painting has to be done, and several pieces of art have to be created again.
we are looking forward to welcoming you soon to world’s first art gallery where you can experience food like art and with all your senses.

we are very pleased to share with you that de culinaire werkplaats is featured as in the travel section of the wall street journal as one of the ‘one-of-a-kind experiences in amsterdam‘ according to rico gagliano (journalist), who visited our venue twice.
this is what he writes about de culinaire werkplaats.
Devour art.
Eric Meursing and Marjolein Wintjes describe themselves as food concept designers—in other words, they play with their food in the name of art. They once crafted an edible, life-size pink wedding dress out of paper-like sheets of rhubarb-infused agar. Four nights a week, their industrial kitchen-slash-studio, De Culinaire Werkplaats (near the cultural complex of Westergasfabriek), turns into a restaurant where each dish looks like a miniature art installation. This month, the couple opens a “food-art” gallery next door, with a debut exhibit of objets created with all-black ingredients—like a sculpture of wafers made from blackberries, black currant and black-curry.

portfolio: discover 5 new paintings by van gogh in amsterdam
after the summerbreak 2015 we started with the eat’inspiration van gogh, his contemporaries and influencers. this eat’inspiration consists of 5 eating experiences through which we made you discover and explore the works and life of van gogh.
the first 3 experiences are savourish and inspired by the 3 periods you can distinguish in the works of vincent van gogh.
- the 1st interactive experience refers to the period van gogh is creating paintings in the netherlands and we used the painting woman lifting potatoes as our inspirational source. in this dish marinated root vegetables wrapped in clay, baked and topped off with mustard lettuce are the heroes.
- the 2nd experience is van gogh à la japonnais and a reflection of the period that van gogh lived in paris, where he started to experiment with colours. one way of doing that was by making freestyle copies of japanese imprints;
- the 3rd experience a freestyle flower arrangement with a special fragrance representing the period van gogh is living in the provence. it is a tribute to the period he settled down in the yellow house in arle where he wanted to start an artists community. here he painted quite a number of still lives many of which showcasing vases with flowers.
the last 2 experiences are sweetish:
- the 4th experience is an interpretation of wheatfield with a reaper, and is an attempt to capture van gogh’s signature brushstrokes.
- painting by numbers is the last experience -which was the favourite of most of our visitors-. this was an interactive course in which the diners could meet with vincent van gogh in numbers.
and…. for the ones that really explored our space there was also a small installation ‘a sniff of vincent’ where you could meet vincent with your olfactus.

august 2 – 17, 2015: in between themes
in the first 2 weeks of august 2015 the restaurant section of studio de culinaire werkplaats is temporarily closed. as for the upcoming theme vincent van gogh we will be changing the interior and the way we will be presenting our eating experiences.
we will also extend our opening hours during the upcoming theme. all the details, start date and what to expect during the eating experience vincent will be published on our website in the first week of august at the latest.
july 10, 2015: trendXchange talk @ the hoxton amsterdam
we were invited by cécile poignant, trend forecaster and editor of the online platform trendtablet.com, to join as a panellist TRENDxCHANGE breakfast talk at the hoxton hotel amsterdam on july 10th, 2015. this gathering was all about food, trends and the future.
the event. cécile poignant presented the future of food by distinguishing and explaining 4 main food trends (roots, farming, erotic, hybrid). after her presentation she moderated a panel discussion about food and trends. the panellists were gerard (sous chef of the soho house), liza chloë van duyn (creative at marie stella maris), and the both of us (marjolein wintjes & eric meursing of de culinaire werkplaats).
the food. the guests were welcomed with a great breakfast offered by the hoxton. and we created a small tasting at the end of the event. we created some edible flowers of strawberry paper, beetroot breakables with apple foam, and dark chocolate with black olive pearls.
trendtablet.com is an online resource/tool which explains how trends grow, evolve and flow. trend tablet is now going offline in various cities in the world (new york, berlin, amsterdam, etc.). the events, called TRENDxCHANGE, are all about looking forward in the attempt to understand the world which we will be living in tomorrow. and are all inspired by the local area. in amsterdam trend tablet teamed up with the hoxton for the offline happenings.

sneak peek: “less= more” high-end vegan workshop
at special request of our guests we are in the process of developing the workshop ‘less = more’, a high-end vegan workshop (dutch & english spoken).
in this workshop we take dutch landscapes as a starting point and translate 5 typical dutch landscapes (shape, taste, texture, presentation, choice of ingredients). besides contemporary + traditional cooking techniques we also pay special attention to plating up dishes, share our knowledge about ingredients, and the art of eating.
the workshop is also interesting for those who like to cook with vegetables, fruits and grains, and would like to extend their cooking repertoire.
the workshop ‘less = more’ will take place once a month on a sunday afternoon from 14.00 – 18.00 hrs. we will publish all details and the dates in august on our website. per workshop we take max. 10 participants.

we have selected 5 important topics of the dutch golden age showcasing the importance of this era. in other words, we offer you to meet art, science and spirituality in a changing economy in 5 dishes in 2015.
