on feb 6th is the kick-off of the eat’inspiration dutch treats? we will make you taste and experience various typically dutch matters. normally we give you some clues & hints, but this time …. we like to keep things somewhat open.

an eat’inspiration.

an eat’inspiration is a theme based journey in 5 courses: 3 times savourish and 2 times sweetish. always preceded by a sneak peak: a house made flatbread with a topping or dip that reveals something about the theme we are exploring.

for the press launch of a detox body treatment by filorga we were commissioned to create a food concept for the invited lifestyle press.

the brief. the concept had to be a combination of:

  • detox
  • black & white (referring to the brand identity of filorga)

the result. 

  • selection of black & white vegetable and fruit bites
  • matching white vegetable mocktail
  • plus various detoxing juices
  • presentation inspired by zen.

frame food experience: is life like a box of chocolates

 

have you ever wanted to experience life in bites? or taste what life has in store? these and other questions we addressed during the 1st frame food experience: is life like a box of chocolates?

upon entering, each guest received a welcome drink and a theme inspired appetiser to begin the journey along the 5 highlights of life. the special moments that we translated into 5 eat’impressions were:

  • kick off: an edible landscape which interpreted the start in life, of a person,  a business, or a relationship
  • meet + greet: a start involves entering the big world while meeting & greeting with other people, companies, cultures, etc. this was illustrated by one ingredient prepared in 5 different ways reflecting its various talents/aspects)
  • connect: during the meets & greets in life you will connect with others. you will find a partner, a business partner, in other words all kinds of mergers take place. relating with others involves a lot of labour, it is hard work. so the participants received a blueprint, and several components and had to create DIY swans. the swan is, by the way, symbol for a lifelong relationship.
  • split up: but… in life not all relationships last for ever. this was showcased by a de-constructed apple crumble pie and we offered a hammer to the guest that wanted to break out of a relationship, a job situation or whatsoever to create the crumble.
  • afterparty: split ups create new openings, new stages in life, so we created in front of the guest an edible multi coloured piece of art to celebrate this new stage. this piece of art was eaten without plates & cutlery.

we created this 2 days only interactive food experience on invitation by in collaboration with frame store amsterdam. and it was inspired by the works of anna lomax and her project ‘event now‘ for frame magazine’s issue 102 in particular. the notion ‘events’ refers for anna lomax to celebrate the big moments in life: life and death. and therefore we took the 5 highlights of life as a starting point.

during the food experience the guests could visit the exhibition of anna lomax and the frame store.

 

dutch masters & master pieces

no-fingerprints by de culinaire werkplaats

in search of excellence is the 2nd eat’inspiration of our project ‘dutch icons revisited‘. on the image: no fingerprints.

no fingerprints is a tribute to a the dutch master burglar Aage Meinesz (aage m.), well known in the 70ties for his well prepared bank robberies using a thermal lance. at the end he was caught, but managed to escape. and… to this day the world is figuring out how he managed to do this.

the eat’inspiration ‘in search of excellence’ is the 2nd eat’inspiration of our project ‘dutch icons revisited‘.

the inspirational theme ‘dutch masters’ was triggered by our project during museums at night amsterdam at the van gogh museum.
the notion ‘master’ refers for us to all kinds of talents, skills and types of excellence. so for this eat’inspiration we selected 5 different expertises.
so for this eat’inspiration we selected 5 different dutch master talents. the eat’inspiration starts with an eat’cocktail inspired by a dutch master burglar, aage m. the other masters we addressed: rembrandt van rijn (painter), rem koolhaas (architecture), iris van herpen (fashion design), marcel wanders (product design).

  • create an edible impression of paintings by van gogh for museums at night 2014 (november 1, 2014) with an emphasis on taste;
  • theme of museums at night @ van gogh museum: all your senses.

the selected paintings

van gogh in colour codes

input for the bites in a nutshell.

  • the fact that vincent became more colourful on the canvas during these 3 periods. we showcased this process by creating colour “bar”codes for the selected paintings, and these colour codes reflected in the 3 eat’impressions.
  • besides the eyes and taste, we also addressed the other senses in each bite, as eating & drinking is a full sensory experience for us.
  • the act of eating/drinking for the visitors of museums at night @ van gogh museum was inspired by the specific action of the persons depicted by van gogh on the paintings.
  • van gogh’s signature brushstrokes we used as input for the wheat field with a reaper.
  • van gogh’s respect for the hard labour by paysants we incorporated in the woman lifting potato.
  • his struggle in life and in his paintings we expressed in the eat.cocktail reflecting agustina segatori in le tambourin. 

the result: 3 eat’impressions reflecting van gogh and his paintings.

  • so visitors could lift and peel potatoes (marinated and wrapped in clay) and they received a bonus for their labour.
  • visitors were invited to experience an eat.cocktail which was expressing in many ways the cafe life of vincent and his struggle as an artist and in life.
  • and visitors could enjoy the labour of the reaper in the field and touch the bright sky.

the future of this project.

  • this commission by the van gogh museum amsterdam inspired us to the eat’inspiration in search of excellence, in which we explore the talents of various dutch masters.
  • this project will be part of our exhibition dutch icons revisited.
  • and in 2015 -in the context of vincent van gogh 2015– we will create an eat’inspiration as a tribute to his work. so … if you did not had the change to do van gogh in 3 bites during museums @ night 2014 we give you a 2nd chance.

for the kick-off of the project dutch icons revisited we randomly have selected 5 dutch landscapes. in the eat’inspiration anything but flat? we make typical dutch landscapes starring.

during this project we will be exploring in 5 dishes whether the netherlands is or is not ‘flat’. we start with some classics and we make you experience the wadden sea area, discover the hidden treasures of limburg or taste the urbanisation of the netherlands. during october we will introduce regularly “new” dutch landscapes.

in the context of the overall project dutch icons revisited  we will create  2 types of interpretations: abstract and eating experiences.

nov 1, 2014: project vincent van gogh

always wanted to experience an impression of a painting by Van Gogh in bites? in that case we would love to meet you at the event all your senses @ the Van Gogh Museum during MuseumNight 2014.  

we have been invited by the Van Gogh Museum to contribute to the event all your senses. especially for this occasion we have translated 3 paintings by Van Gogh into bites, into eating impressions. and … it is about more than taste only.

the project vincent van gogh.
since the invitation by the Van Gogh Museum eric and marjolein visited the museum a number of times to refresh their memory about this unique artist and the impressionist art time frame. futhermore, they read several publications about vincent’s work and his life.
especially marjolein is very pleased with the invitation. as she just started the project dutch masterpieces, part of the overall project dutch icons revisited.
many of his paintings have been subject to lively discussions between marjolein and eric. ultimately they made a selection of three works, which they translated into three different eating experiences in bites.

wake up: the versatility of the exotic coffee bean – a 1st exploration.

costa rica; eat'inspiration wake up by de culinaire werkplaats

all around the world coffee bars are popping up, even in countries where people traditionally drink tea. and… the phenomenon coffee to go did change street life forever.

the challenge. coffee seems so popular, that it is quite interesting to find out what you can do more with it besides brewing and drinking coffee. so we selected 5 coffee beans, all single origins, coming from 5 different countries: brazil, ethiopia, sumatra, guatamala and costa rica. the most popular ingredients available in those countries inspired us to 5 different dishes. in each dish we used coffee in at least one or two different ways. click on this link for the menu of the eat’inspiration wake up.

the result. the eat’inspiration wake up was much to our surprise an unexpectedly huge success. some people were really fascinated by the tomatoes marinated in coffee. furthermore wake up resulted 4 new products: wake up pearls, a marinade ‘the kick inside’, coffee paper, and last but not least we added a new flavour (sumatra coffee) to our collection the breakables.

what did we learn. allthough coffee seems to be extremely popular all around the world we discovered that

  • a lot of people do not like coffee for various reasons. we received a lot of e-mails from people suffering from some kind of caffeine anxiety or problem. for those people we created a decaf version.
  • and we discovered that many people do not like the taste of coffee, and especially refer to the bitterness. but … the most open minded came to experience this eat’inspiration and they all explained afterwards that they enjoyed the taste of the various culinary applications of coffee, very much to their own surprise. so …. we think we can conclude that drinking coffee and using coffee in all kinds of other ways reveals different taste sensations.

each july our eating experiences are inspired by our motto food = fashion and the summer edition of fashion week amsterdam. this year you can expect from us an outlook on fashion, or rather on haute couture, on coffee haute couture!

the contemporary way of producing, selecting, roasting, brewing and drinking coffee has the same allure as fashion. the renewed attention to the exotic coffee bean closely follows the current trend of fashion & interior: a penchant for the past and for foreign countries is reflected in all kinds of exotic designs and accessories. the revival of coffee has also led to the trendy coffee bars and the new profession of coffee sommelier.

wake-up, the eat’inspiration.

  • inspirational source: the coffee bean;
  • consists of five dishes: 3x savourish and 2x sweetish;
  • the 5 dishes of wake-up are inspired by our selection of 5 coffee producing countries, namely: costa rica, ethiopia, guatemala, brazil and sumatra;
  • in addition, we explore in wake-up 5 different single-origin coffee beans and you can experience at least 5 times a new perspective on coffee.
  • all our selected coffees consist of 100% arabica beans contain 70% less caffeine than robusta coffee beans.
