each july our eating experiences are inspired by our motto food = fashion and the summer edition of fashion week amsterdam. this year you can expect from us an outlook on fashion, or rather on haute couture, on coffee haute couture!

the contemporary way of producing, selecting, roasting, brewing and drinking coffee has the same allure as fashion. the renewed attention to the exotic coffee bean closely follows the current trend of fashion & interior: a penchant for the past and for foreign countries is reflected in all kinds of exotic designs and accessories. the revival of coffee has also led to the trendy coffee bars and the new profession of coffee sommelier.

wake-up, the eat’inspiration.

  • inspirational source: the coffee bean;
  • consists of five dishes: 3x savourish and 2x sweetish;
  • the 5 dishes of wake-up are inspired by our selection of 5 coffee producing countries, namely: costa rica, ethiopia, guatemala, brazil and sumatra;
  • in addition, we explore in wake-up 5 different single-origin coffee beans and you can experience at least 5 times a new perspective on coffee.
  • all our selected coffees consist of 100% arabica beans contain 70% less caffeine than robusta coffee beans.
  • please note: if you are not into coffee – please book the decaffeinated version.

  • we invite you to share any allergies, dietary restrictions or wishes when you book your eat’in experience. so it is possible for us to tailor our menu. it is a challenge for us to prepare something very special and inspirational for you.

choice of ingredients

  • besides taste and inspirational concept at least 2 of the following criteria also provide for our choice of ingredients, products, and suppliers: animal welfare, small-scale or organic farming, fair trade, direct trade, season, distance, and personal health.

is water, the new champagne? how can a routine be a unique experience at the same time? ever seen so many hidden gems? by the way .. do you know that the turbulence of our daily life and the human nature can be expressed with just one simple pear?

it are complex times, and a new era requires new ways of approaching & doing things, new solutions and rethinking the future.

  • the eat’inspiration sign of the times is about the new luxury, is about less and more.
  • explore and experience in 5 dishes –transparency, stones, pearls, water and essence– a small selection of the many new luxuries offered by the future and the dinnerplate of the future.


  • specially for the 20th edition of amsterdam fashion week (january 17 – 27, 2014) we will translate sign of the times to a trendforecast in which food & fashion meet.


  • sign of the times is the 3rd of a 3-part series of eat’inspirations exploring the notion TIME, it is a adventure to search for new tastes, textures, food pairings and new ways of eating using TIME as inspirational concept.
  • sign of the times is at  the same time inspired by an eating special which we created specially for the moscow design museum in the context of the exhibition new luxuries (nov 14 – jan 12, 2014).



eat.patterns s/2014

apple & cinnamonthe project. eat.patterns s/2014 is a color and texture forecast for s/2014 and beyond … in which food and fashion trends meet. a 2 days only installation, created especially for the summer edition of amsterdam fashion weekend. the forecast is visualized by 5 fashion fabrics of fruit and vegetables. the patterns of the edible fashion fabrics are reflections on five global trends that are more and more visible in the various domains.

the selected trends. in progress, transparent, origin, blend, and last-but-not-least basic.

the approach. the five selected global trends are translated into five dishes. the created fabrics on display are an interpretation in color and texture of those dishes.

food equals fashion. food and fashion are connected in many ways. this project highlights that food & fashion are developed from basic needs to lifestyle reflecting the contours of the zeitgeist. the installation eat.patterns s/2014 is not only a forecast for fashion & food, but it connects food and fashion with identity. the project also addresses the vulnerability of the eco system.


eetinspiratie fashion matters?


given our motto food equals fashion, we traditionally create twice a year during amsterdam fashion week eating experiences which are fashion related. the projects vary from forecasts for fashion fabrics to interpretations of textile textures. in july 2013, our inspirational concept is dutch fashion design.

the eat’inspiration fashion matters? consists of a selection of five renowned dutch fashion designers. the dining experience showcases interpretations of the unique view of viktor & rolf, the prominent patterns of spijkers & spijkers, an eye for detail and love for the craft of embroidery of jan taminiau, the anti-fashion of bas kosters and the material explorations of iris van herpen.

fashion matters? reflects the work and ideas related to fashion of the five selected dutch fashion designers, but in edible form.

in particular, the colourful anti dessert -an interpretation of the work of bas kosters- was unexpectedly highly appreciated by the majority of our guests, as well as our interpretation of the flower bomb by viktor & rolf.

ever had a catwalk on your dinnerplate? in july 2013 you can experience spoons full of fashion at de culinaire werkplaats, as we created the eat’inspiration fashion.matters? a dinner special which is a tribute to dutch fashion design in 5 dishes.

eatinspiration fashion matters.

  • the fashion designers. we have selected the following 5 dutch fashion designers. you can will taste the unique view of viktor & rolf, the poetic use of materials of jan taminiau, the innovative approach of iris van herpen, the seemingly anti-fashion approach of bas kosters and the pronounced motives of spijkers & spijkers.
  • the interpretation. at the moment we are in the process of research. we are exploring the philosophy and works of the selected designers. not only form,  also the taste, the choice of ingredients, textures, colour and pairings are important aspects.
  • design issues. but… as the inspirational concept fashion matters? suggests, we will also pay attention to various  design issues while creating this eatinspiration.
  • food & fashion. are inextricably linked. since our first highly successful food = fashion project taste the unwearables in juli 2009 it  is already the 8th time we present an inspirational dinner special and an installation inspired by fashion.

eat.patterns s/2014: a 2 days only installation. specially created for amsterdam fashion weekend.

matching cocktails. as the installation is displayed at the entrance of the bar of the amsterdam marriott we have created together with the marriott hotel -for this weekend only- 5 matching cocktails inspired by the patterns of the fabrics.

the project. eat.patterns s/2014 is a colour and texture forecast for fashion fabrics s/2014 and beyond … in which food & fashion meet. the forecast is visualized by 5 conceptual, cradle to cradle dress silhouettes made out of edible vegetables and fruit fabrics.

the patterns of the edible fabrics are reflections of 5 important global trends which are becoming more and more visible in the various domains of life. the selected trends are transparent, in progress, origin, blend, and last but certainly not least basic.

food equals fashion. the installation eat.patterns s/2014 is not only a forecast for fashion & food, but also unites food, fashion and identity. furthermore, the work questions the temporality of fashion and food. the project is an exploration of the premiss: food = fashion. we have a motto: food equals fashion. we believe that what you eat tells a story as personal as the one that is revealed by the clothings you wear.

vooruitblik eerste maanden 2013

in 2013 there will be a large number of activities in our program ranging from eat’inspirations, installations, exhibitions to pop up eating specials & dining experiences, lecturers and… you will find us and / or our work a number of times abroad. england, italy and germany are already in our agenda. so … no lack of variety.

in september 2013 de culinaire werkplaats celebrates its 5th anniversary. therefore during this “jubilee” year we let pass all our most favorite themes, but of course from a new perspective.

ever considered your dress to be a dessert?

during amsterdam fashion weekend in january 2013, we displayed in the lobby of boutique hotel JL No. 76, one of the four vondel hotels, a conceptual cradle to cradle wedding dress made of rhubarb fabric. the dress is edible and the ingredients are organic and locally produced.

this installation focusses on the relationship between food & fashion & identity. our motto is food equals fashion and this installation is an investigation of the premiss: food = fashion.

the conceptual dress is part of the project taste the unwearables revisited, one of our many projects in which food and fashion meet. it is food for thought, so to speak. the installation addresses the future of food & fashion. it’s about the concept of temporality in general and in fashion. the project is alluding simultaneously the fragility of the ecosystem.

we are still working on the installation, and also on our investigation of the question is food fashion? this installation is also work in progress, and will be presented again to the public when it is completed. the question and the project are part of the book which we are making right now.

answers to some frequently asked questions:

  • yes, we make the edible dress installation in commission;
  • it takes about a week to make a dress;
  • the dress can not be shipped, but has to be built on location.

af weekend: taste the unwearables revisited @ hotel JL no 76 amsterdam

time flies…. in january 2013 it is again amsterdam fashion week. amongst the af downtown programma and the official catwalk shows there will be a special af weekend in the area: PC Hooftstraat, Jan Luijkenstraat, Van Baerlestraat, Cornelis Schuytstraat, Beethovenstraat, Museumplein on january 19 and 20, 2013.

installation. during this special weekend -and also during the remainer of the afw- in the lobby of Boutique Hotel JL no. 76 an installation created by de culinaire werkplaats will be exhibited.  it is a.o. a conceptual cradle to cradle dress of edible vegetable fabric, part of the project taste the unwearables revisited, a project in which food & fashion meet.

you’ll find Boutique Hotel JL no. 76 at Jan Luijkenstraat 76, it is one of the 4 Vondel hotels.

food = fashion. since july 2009 the food concept designers, marjolein wintjes & eric meursing, participate bi-annually in the downtown amsterdam fashion week programme with innovative eating specials and installations inspired by fashion and especially created for afw. their food = fashion projects varying from eat.patterns to colour & texture forecasts for fashion fabrics 20xx and beyond.

eat’inspiration. in january 2013 the restaurant section of the design studio de culinaire werkplaats will be closed, as the couple is working on a book, in which also a chapter is devoted to the question is food fashion? so … in january no food=fashion eating special, but instead a very tasty and innovative food=fashion installation @ Hotel JL no. 76.


exhibition food project @ mart italy

MART – Museo di arte moderna e contemporanea di Trento e Rovereto is organising an exhibition entitled FOOD PROJECT. The shape of taste, programmed from 9th February to 2nd June 2013 and devised by beppe finessi, professor of design at the milan polytechnic.

a great diversity in designs and perspectives will be exhibited, amongst others several projects by marti guixé. we were also approached for participation and our first food = fashion project taste the unwearables has been selected. this project was especially designed for and during amsterdam fashion week july 2009.
