portfolio: a selection of black matters


black is one of our signatures. outside our venue we are known as ‘the people of the black food’.

as we are in the process of starting a new venture ‘The Storage Room’, an art gallery where you can experience food like art, we thought it is was an interesting idea to pick up -after more than 7 years- our black theme again.

for the eat’inspiration the new black we created a selection of ‘black matters’. and hereafter you find the most favourite 5 dishes of many others that made it to a plate.

    • black star: our personal tribute to david bowie.
    • the black list: we shared our blacklist with our guests.  in our first exhibition ‘beyond black’ at our new project space we will reveal in a non edible way our blacklist;
    • black tuesday; the wallstreet crash in 1929 inspired us to this creation. a history teacher that dined at our venue durning this eat’inspiration explained that we had the wrong day. it should be ‘black thursday’. however, we learned that this crash was a big process that emcompassed several days. and our black tuesday was about the final ending, and black thursday was all about the beginning of this process.
    • colourful black: with this dish we try to share what we have learned from our first theme ‘black’. black is not 1-dimensional, it is very colourful.
    • black pearls: these are scarce. and we discovered there are many black commodities that are scarce. scarcity & black were the input for our dish.

outside our own venue we are known as the people of the black food. this knickname we owe to the first theme we explored, which was black.

during the first 6 months we only created ‘black’ dishes. after this period we decided to leave this ‘black’ period behind us and became more colourful.


we still like to collect black ingredients, as a kind of hobby.

and depending the theme we still like to use one or more  black ingredients.

at this very moment we are updating our little black book and our black food concepts.
so we are creating new black edibles.

on the image you see a black bite, which is part of our black blossoming stones collection. this bite is black spicy carrot in disguise.

in march 2016 we will launch with the new black a new and unique way of experiencing food.

black was the first theme to present our view on food to the public. ever since we are known outside our venue as ‘the people of the black food‘. …. and that is why we once again choose black to be our kick-off theme for this new type of eating experience.

portfolio: eat’inspiration time flies…

the eat’inspiration time flies … (november-december 2013) is the 2nd of the 3 part series TIME, in which time is the central focus of our exploration.

time flies… in particular in 2013 time seems to be accelerating. the hours, the days, the seasons appear to fly by faster than ever before. it feels as if we started de culinaire werkplaats yesterday.  so we think it is a good moment to reflect on a number of milestones of the past 5 years. the month november and december of each year are the perfect moments to reflect. so a great opportunity to showcase some of our key milestones in 5 dishes.

but…. what are the milestones?

from our point of view not our successes, the best eat’inspirations, concepts or our best food items.  no, the key milestones are the 5 food moments and themes gave our projects a new dimension or our signatures.

so the following themes/concepts were to be found on the menu: black, food = fashion, landscapes & architecture, water, and transformation. all dishes were presented with a new twist, as time brings new insights.

nov 08 – dec 28, 2013: eat’inspiration time flies…..

time flies….. when you are having fun!! time seems to be accelerating. the hours, the days, the seasons appear to fly by faster than ever before. so we feel it is a good moment to reflect on a number of milestones of the past 5 years.

but … what is a special moment, a milestone anyway? this question caused several interesting conversations at the dining table. finally, we have selected 5 projects that gave a new direction and a new dimension to our work:

  • black. september 2008 : an introduction to thepower of black and on our menu you’ll find one of our classics from our black collection.
  • water. august 2010 : water ballet , one of the dishes of our water menu which was awarded with the title the best benelux vegetable restaurant 2011.
  • fashion + design. july 2009 + november 2012 : our motto is food equals fashion. experience with upside down our interpretation of the idiosyncratic work of the dutch fashion designers viktor & rolf .
  • landscapes & architecture (2011): out of the many eat’inspirations about landscapes & architecture we decided on a dish from the eat’inspiration urban landscapes . a dish that showcases that the streets in amsterdam will never be same again.
  • shanghai. may 2012 ( launch event of drive to another beat, shanghai ): one of the ideas inspires us to this day. here already the main ingredients : transformation , black, red and the logo of bentley .

time flies is the 2nd eat’inspiration of the triptych TIME. in the beginning of 2014 you can experience the taste of the new luxury in the 3rd eat’inspiration sign of the times.



beauty & care

we were commissioned by cosight paris to create a lunch’inspiration for the management of unilever beauty & care uk. due to a tight time schedule this eat’inspiration consisted of 3 instead of 5 dishes. the inspirational concept is of course beauty & caring.

we created the following dishes:

  • the essence of beauty & caring to showcase the fact that beauty is not one-dimensional, and the hero of this dish is the tomato, a product containing a lot of water (about 93%), which is excellent for your body. futhermore, eating tomatoes is great for your skin, the lycopene of it takes away the effects of air pollution and tomatoes seem to be natural sun blockers;
  • fast beauty reflects that a lot of people nowadays do not want to spend much time on eating, but also on personal care. so we created some healthy “fast” food in which the colour black is leading. black pigments contain a high percentage of antioxidants;
  • the ugly duckling. a dessert that contained amongst others green + white tea and dark chocolate. all 3 ingredients are well known for their contributions for skin care & mood.

during the lunch there were 2 presentations about skin care by mascha feoktistova (beauty blogger) and dr jetske ultee (physician).


vooruitblik eerste maanden 2013

in 2013 there will be a large number of activities in our program ranging from eat’inspirations, installations, exhibitions to pop up eating specials & dining experiences, lecturers and… you will find us and / or our work a number of times abroad. england, italy and germany are already in our agenda. so … no lack of variety.

in september 2013 de culinaire werkplaats celebrates its 5th anniversary. therefore during this “jubilee” year we let pass all our most favorite themes, but of course from a new perspective.

limited edition eat’in experiences 2013

besides the almost monthly changing eat’inspirations we make this year so-called limited edition eating experiences. in other words, eating experiences for 1 or more days, some at de culinaire werkplaats and some at another venue.

so location scouting is a priority on our agenda. at this very moment we are looking for suitable venues for the themes silence and black.

furthermore we have planned a 24 hours eating installation on the day of the architecture on 23 june this year. to our regret we could not get the requested permits, so in 2014 we get hopefully new chances.

14-15-16 sept 2012: dinner.talks @ smaakexplosies

during the 4th edition of smaakexplosies, a cultural & culinary festival, we worked on project dinner.talks.

usually we chat quite a lot as we dine, we improve the world, we discuss the highlights of the day, share intimacies, and if dinner tastes really delicious we even swap recipes and cooking tips. but … often we are so noisy while we’re eating that the stories of you dinner most of the time are lost … so we thought it’s time to work on some dinner.talks, two interactive installations: black + colourful dinner.talks.
