april-may 2015: taste the dutch golden age in 2015.
ever wanted to taste a painting by rembrandt van rijn? or experience the tulip mania, which was the first speculative bubble ever? or check out the influence of spices, coffee, tea, chocolate and other trophees from the worldwide seatrips and colonies on the dutch cuisine? or nible on the amsterdam canal district?
all part of the dutch golden age, a period of great change in both dutch and world history, roughly spanning the 17th century, in which dutch trade, science, military, and art were blooming.
we have selected 5 important topics of the dutch golden age showcasing the importance of this era. in other words, we offer you to meet art, science and spirituality in a changing economy in 5 dishes in 2015.
an eat’inspiration.
an eat’inspiration is a theme based journey in 5 courses: 3 times savourish and 2 times sweetish. always preceded by a sneak peak: a house made flatbread with a topping or dip that reveals something about the theme we are exploring.

nov 23, 2014: chocomania @ SLA zuidas
we were invited by nina pierson, co-founder SLA (a chain of contemporary salad bars in amsterdam) to participate in the SLA lab programme. for which we created chocomania, a chocolab, in which pure & raw chocolate have the centerstage.
on a sunny sunday afternoon, november 23rd to be more precise, we hit the road for SLA zuidas amsterdam. at the very moment we were ready with all the preparations the enthousiastic participants for chocomania began to trickle in.
as a chocolate bar does not find its way to the shop shelves by itself we kicked off with the story of ‘from flower on a cacao tree to chocolate bar‘. after the introduction we invited the participants to a tasting of 5 different pure and raw chocolates, which they could score using chocolate tasting forms. it was great to exchange all kinds of thoughts & opinions.
hereafter we continued with another kind of tasting, a tasting of textures and combinations, and a demo of tempering chocolate, and some other contemporary techniques. chocomania did end with assembling & tasting a vegetable/chocolate dish.
we enjoyed the interesting questions, the discussions during the various tastings and demo.
esse organic skincare
october 17, 2013, we have hosted the press presentation of esse organic skincare. for the journalists and bloggers we have created 3 dishes in which the ingredients shine that are part of the various skincare products.
esse works exclusively with pure ingredients without any chemical and colour additives. all products of esse are also organic, fair trade and whenever possible made from local sources. esse is the brainchild of trevor steyn. at this launch he explained the philosophy and the products of esse to the audience.
we enjoyed the co production with willa stoutenbeek van wgreen (pr), and alexander dikkes (importer en distributor van o.a. esse organic skincare).
‘n frisse blik op groenten voor bonduelle
in the beginning of january 2013 we welcomed the team of bonduelle and their guests for a customized eat’inspiration.
bonduelle commissioned us to create -how could it be otherwise- an eat’inspiration in which vegetables are leading. the result: the eat’inspiration a fresh view on vegetables (view/look has in dutch a double meaning. this word also refers to a tin can).
we created an eat’inspiration of 5 dishes in which for vegetables in both the savourish and sweetish dishes are the main ingredients. what kind of dishes were passing by. amongst others, there was a dish which revealed the essence of one specific vegetable, another one showed the talents of the combination chocolate & shallots, and a third one how the use of old and new cooking techniques can contribute to interesting flavour combinations.
the picture above showcases one of two sweetish dishes, namely greenhouse plants, in which tomatoes are the heroes. these tomatoes were preserved by us in the summer of 2012 with a special marinade to create tomatoes with a twist: 2 times the taste of summer in one ingredient.
fairtrade treats
on november 3, 2012, max havelaar organized a fair trade bloggers event. the kick off of this event took place at de culinaire werkplaats. especially for this occassion and the coffee/tea moment we created 3 sweet treats with fresh fair trade ingredients:
- ananas croquettes with a dip of coconut;
- marinated apple with a topping of avocado foam and caviar of applejuice;
- wontons with a filling of dark chocolate and coffee with a dip of tahini.
this is already the 3rd time we host with pleasure an event of max havelaar.
