the eat’inspiration time flies … (november-december 2013) is the 2nd of the 3 part series TIME, in which time is the central focus of our exploration.
time flies… in particular in 2013 time seems to be accelerating. the hours, the days, the seasons appear to fly by faster than ever before. it feels as if we started de culinaire werkplaats yesterday. so we think it is a good moment to reflect on a number of milestones of the past 5 years. the month november and december of each year are the perfect moments to reflect. so a great opportunity to showcase some of our key milestones in 5 dishes.
but…. what are the milestones?
from our point of view not our successes, the best eat’inspirations, concepts or our best food items. no, the key milestones are the 5 food moments and themes gave our projects a new dimension or our signatures.

portfolio eat’inspiration just in time.
the eat’inspiration just in time is the first of a trilogy that explores the concept of time .
we tried to capture the zeitgeist in 5 dishes:
- rhythm: food structures your daily rhythm , but also your life . you have breakfast, lunch and dinner, you’ll experience the seasons and the milestones with food in your life .
- t.time : we have to twitter, facebook,, we have to expose ourselves all the time, and showcase how successful we are. so for many people it is difficult to live in the present. t.time is a dish based on the japanese concept ichi-go ichi-e (one life, one meeting). in the context of a tea ceremony it is a call for reflection to experience a routine act as a unique moment. this dish was by the way a try out and a sneak peek of our first tea concept where is my t. that we launched on oct 20, 2013 @ dutch design week 2013.
- too late ?: the pessimists among us believe it is 5 to 12 . if we do not change our consumer behaviour, it could be too late for mother earth.
- clockwise : a contemporary view on the world and a new way of eating. various marinated vegetables + dark chocolate. discover your own favorites clockwise or the other way around and realize where your clock or the clock stands.
- (under) pressure : sorry , but we are just like you permanently struggling with pressure and always have the feeling we are TOO busy. so we constructed (or is it deconstructed ?) a rather popular comfort dish, in this case an apple pie, and re-created it using the many possible interpretations of pressure.
sept 27 – oct 31, 2013: just in time
(prolonged until november 2nd, 2013)
experiencing an eternal lack of time? always meeting your deadlines at the last minute? does time always trouble you, even in the kitchen? in that case the eat’inspiration just in time is certainly a must-do for you.
food and time are linked in very many ways. time is a huge inspirational source. on friday september 27, 2013 you can enjoy the kick off of just in time, the 1st eat’inspiration of the triptych TIME. just in time is for the both of us a personal theme. as most of the time eric starts to create the menu …. at the last minute and puts marjolein’s agenda regularly under a lot of pressure. just in time is not only a way of organizing things, but it is a social theme as well. many believe it is 5 to 12, that we are running out of time. and if we do not change it might be too late for the world.
so …. the perspective of just in time is quite interesting, and therefore it is the theme of the 1st eating experience of the 3 part series TIME. we make you taste rhythm in many different ways. the dish t.time is all about experiencing the moment, about one life-one moment. thereafter you may nibble on the question: too late?. of course we’ll put something under pressure on your dinner.plate. and last but not least we introduce to you the phenomenon of clock.wise eating.

- consists of 5 theme based dishes: 3 times savourish and 2 times sweetish. every eat’inspiration is preceded by a sneak preview: flatbread with a topping that reveals something of the eat’inspiration.

eetinspiratie fashion matters?
given our motto food equals fashion, we traditionally create twice a year during amsterdam fashion week eating experiences which are fashion related. the projects vary from forecasts for fashion fabrics to interpretations of textile textures. in july 2013, our inspirational concept is dutch fashion design.
the eat’inspiration fashion matters? consists of a selection of five renowned dutch fashion designers. the dining experience showcases interpretations of the unique view of viktor & rolf, the prominent patterns of spijkers & spijkers, an eye for detail and love for the craft of embroidery of jan taminiau, the anti-fashion of bas kosters and the material explorations of iris van herpen.
fashion matters? reflects the work and ideas related to fashion of the five selected dutch fashion designers, but in edible form.
in particular, the colourful anti dessert -an interpretation of the work of bas kosters- was unexpectedly highly appreciated by the majority of our guests, as well as our interpretation of the flower bomb by viktor & rolf.
portfolio: eating architecture #02
architecture and landscapes is one of our most favorite themes. in 2011 we have created two eat’inspirations in which architecture is the inspirational concept: eat’in architects and eat’in bauhaus. this year we have explored a new selection of architectural projects.
the created dishes are not only based upon shape and appearance of the building. also the philosophy and the concept of the architect(s) are taken into consideration in our choice of presentation, form, ingredients, taste, etc. etc.
- monumental is an interpretation of byzantium near the vondelpark of amsterdam and designed by rem koolhaas. the dish is a reflection on the materialization and the penthouse, originally planned to be a sky bar accessible to the public via a glass elevator.
- storage is inspired by the first and renewed function of the maritime museum amsterdam and the beautiful glass roofing; a result of the recent and major refurbishment. initially the building is an arsenal, later it became a “storage” for dutch maritime heritage. its original design is by daniel stalpaert. the master plan of the recent renovation is the work of liesbeth van der pol. in this dish the golden and 21st century meet.
- material is about the story of betondorp (concrete village) by dick greiner. betondorp is a neighbourhood in the east part of Amsterdam. the district is designed as a garden village and is an experiment with concrete. as after world war I red bricks are scarce and expensive and after the war period there was need for low-cost housing.
- royal given the recent inauguration we created a free interpretation of the royal palace at dam square. originally the 1st town hall of amsterdam designed by jacob van campen and an example of dutch classicism. in the dish regality, orange, and a juwel of a classic grain meet.
- destination unknown. this dish refers to the award-winning project vacant.nl by rietveld landscape. this office created an installation showcasing all vacant public buildings in the netherlands and give some ideas for new functions. the project was designed for the dutch pavilion of the venice biennale. we have designed a small plan of empty spaces for our guests, and introduce some novel flavour combinations.
furthermore, we had planned to create a 24 hours eating installation at the day of the architecture (june 23, 2013), but the necessary permits were not granted. next year, new chances.
july 5-27, 2013: the taste of dutch fashion design in 5 dishes
ever had a catwalk on your dinnerplate? in july 2013 you can experience spoons full of fashion at de culinaire werkplaats, as we created the eat’inspiration fashion.matters? a dinner special which is a tribute to dutch fashion design in 5 dishes.
eatinspiration fashion matters.
- the fashion designers. we have selected the following 5 dutch fashion designers. you can will taste the unique view of viktor & rolf, the poetic use of materials of jan taminiau, the innovative approach of iris van herpen, the seemingly anti-fashion approach of bas kosters and the pronounced motives of spijkers & spijkers.
- the interpretation. at the moment we are in the process of research. we are exploring the philosophy and works of the selected designers. not only form, also the taste, the choice of ingredients, textures, colour and pairings are important aspects.
- design issues. but… as the inspirational concept fashion matters? suggests, we will also pay attention to various design issues while creating this eatinspiration.
- food & fashion. are inextricably linked. since our first highly successful food = fashion project taste the unwearables in juli 2009 it is already the 8th time we present an inspirational dinner special and an installation inspired by fashion.

may 24 – june 29, 2013: taste dutch architecture
are you interested in architecture or design? in that case our eat’inspiration eating architects is a must for you. you can do amsterdam in 5 dishes.
we offer you the opportunity to have a bite of one of the recently renovated amsterdam museums and experience the golden age meeting the 21st century, and what do you think of a portion of the royal palace of amsterdam on your dinnerplate? or do you prefer more modern monumental design like the byzantium next to the vondelpark designed by rem koolhaas? or are you more interested in expermental materialization? then you’ll like our interpretation of betondorp, an amsterdam neighbourhood known for its white concrete. or is ‘destiny unknown’ our interpretation of a very special and awarded project by rietveld landscape, an amsterdam based studio, more your cup of tea?
for the eatinspiration eating architects we have selected 5 projects, mainly situated in amsterdam, or the project is from amsterdam based architects. we try to capture the interpretation of the philosopy of the architect and the project in 5 dishes.

portfolio: blooming
after a long, dark and cold period we thought it was time for some spring in the air. so …. we sowed various beans and peas. their enthusiastic growth inspired us to explore the concept of growth and so the eatinspiration blooming saw the light.
you can distinquish various types of growth. most people think in terms of quantitative growth only, like exponential growth. but … growth can also refer to intrinsic growth or to the rhythm of growth, like organic growth. furthermore, growth refers to a number of phases.
to come to full bloom you need a nutricious breeding soil. but also the time and context to determine whether someone or something may come to its full potential. the phenomenon of growth and prosperity is not limited to plants. also organizations, people, societies, insights, ideas, etc. develop, grow and prosper in all kinds of ways.
we have randomly selected 5 types of growth. these five different types of growth we have explored and translated into ingredients, preparation, form, etc. our selected growth modes are: rampant growth, circle, blooming, crystallizing, and symbiosis.

portfolio. water, the new champagne?
de culinaire werkplaats has a very special relation with water. our first five water dishes, which we presented in august 2010, were awarded with the best benelux restaurant in 2011. we work on the dinnerplate of the future and water has a crucial part in the production and the preparation of foods. so if you eat, you consume directly and indirectly lots of water.
on march 22 it’s always world water day, so march is clearly a suitable time for the water issues we address with the eat’inspiration water, the new champagne?
water. seems in the netherlands often to be taken for granted. you only have to open your tap and you have gallons of clean drinking water at your disposal. this is not the case all over the world
the perspective. for the eat’inspiration water, the new champagne? we explore the issue of water scarcity and excess of water. and this perspective is the starting point to create five different dishes and several installations that expose the role of water in our lives in a playful way.
the dishes. the names of some dishes will sound familiar, but we approached the concepts from a new perspective. as the sneak preview we presented flatbread with “fake” water bombs. on the menu: a winter version of our interpretation of waterworks, the beach at low tide, a water.ballet, a piece of desert and a free interpretation of the climate change.
the images of the dishes, the explanation of the various layers of dishes and installations will be part of our book, which we are making right now.

ever wanted to know what it is like when the red carpet is laid out especially for you? no ….? in that case grab your chance and book the eat’inspiration red revisited.
we’ll have the warm, loving, passionate, lively, romantic and exciting side of the colour red transformed into 5 dishes. after the red carpet experience, you’ll have a date with a lady in red. thereafter we let you play with fire, and give a healthy blush. last but not least we plate up a dangerous, but romantic combination.
an eatinspiration inspired by the new romanticism which is in the air in these turbulent days, valentine’s day, warm sweaters’ day in the netherlands, and the need for warmth at the end of the winter season.
