the art of giving + gift wrapping

  • on the image an impression of one of the desserts, an interpretation of the art of giving + gift wrapping (furoshiki)
  • japan is known as a gift-giving culture. gifts are not presented only on special occasions, but also as part of a reciprocal tradition to show appreciation, to build relationships and to express courtesy.
  • it is not uncommon to give gifts of fruit in japan, as fruit is considered to be a luxury product.
  • the dessert consists of 4 layers, in the centre you’ll discover a marinated cherry, and the dessert is wrapped in edible cherry “paper”.

commissioned by an international perfume house we created an interactive inspirational session for a group of fragrance developers.

this inspiration day ended with finger food and diy cocktails inspired by several world famous perfumes.

so this year’s valentine’s day we were inspired by various types of happy moments.

you can nibble on some burning love, but also experiencing the taste and texture of love on the rocks as well. furthermore, the art of giving and appreciating the beauty of ageing are on the menu as well.

portfolio 2016: eat’inspiration dutch masters

for the eat’inspiration dutch masters 2016 we have created a 5 and 7 course menu.
one of the seven selected dutch masters on the menu is our most famous dutch golden age painter: rembrandt van rijn.

inspirational source: 

  • the pendant wedding portraits of marten soolmans and oopjen coppit by rembrandt van rijn.

dish inspired by rembrandt van rijn

in short, the story:

  • the portraits were painted upon the occasion of the wedding of marten soolmans and oopjen coppit in 1634;
  • the subjects were painted individually, however, the portraits have been kept together since their inception;
  • the pendant wedding portraits were formerly owned by the rothschild family;
  • and they became jointly owned by the louvre museum paris and rijksmuseum amsterdam;
  • one important condition: the paintings should always travel and exhibit together.

interpretation:

  • it is about a marriage between two different personalities, and the present ownership is a kind of marriage between france and the netherlands;
  • 2 people: 2x en papillote with different fillings consisting of dutch and french ingredients become one dish by mixing the content of both parcels;
  • the parcels are connected by the infinity symbol: symbol for eternal life and the interaction of opposing powers.

kick-start, 1st dish of eating special blooming

during the easter weekend 2016 we created the 4 days only eat special blooming II.

in our first eat’inspiration blooming we explored the various types of growth. in this second exploration we focussed on the different stages of growth.

life, and therefore growth, starts with a seed, a bulb, an egg, an idea and after some time -if the conditions are right- there is a beautiful plant, tree, animal or human in full glory.

blooming or flowering is one of the stages of growth. there are various types of growth, such as exponential, fractal or organic growth. besides a nutricious breeding ground also the environment determines whether something or someone can come to full bloom.

the phenomenon of growth and blooming is not limited to plants only.

also organizations, people, societies, insights, ideas, etc. develop, grow and flourish in all sorts of ways.

eating special blooming II for the easter special blooming, we randomly selected 5 aspects of growth and translated these aspects into 5 different courses (3x savourish and 2x sweetish). the sneak peek was flatbread with artichokes:

  • growing up
  • economics
  • blossom
  • and rampant growth.
 

feb 19-20-26-27, 2016: experience a selection of dutch icons II

due to success this eatinspiration is prolonged until february 27th, 2016  with a short break on feb 12-13-14, 2016, for the 3 days only eating special ‘from amsterdam with love’. flyer dutch icons-2

in 2016 we kick-off with a selection of dutch icons with a twist. this time no wooden shoes,  windmills, no dutch design or hans brinker who stuck his finger in a dike.

instead… we have created for example a bulb experience for you. you may explore a typical dutch landscape. you will meet some dutch delights and classics. and ….. you may try a plate with some dutch wickedness on it.

portfolio: conference design & innovation

eating experience bubble house

commissioned by shell we created an interactive morning eating experience for a group of international ceo’s who were participating in a conference about design & innovation.

the experience started with a presentation about the design & innovation strategies of shell, and various strategies in general.

thereafter marjolein introduced studio de culinaire werkplaats and the way here materials, techniques, etc. are explored in the quest of finding new tastes, new textures, new food pairings and new ways of eating.

for this morning session the inspirational source was dutch design. we selected the following 5 dutch design projects as inspirational source for the various eating experiences:

  • atelier nl: projects drawn from clay and fundamentals
  • jongeriuslab: coloured vases #3
  • dus architects: projects bubble building + 3d printed canal house
  • raaaf: vacant.nl

the session was closed with lessons learned.
