may 7, 2018: top 100 vegetable restaurants by we’re smart world

on may 7th, 2018 we headed to bazel, belgium, for the 2018 edition of the we’re smart world event.

think vegetables! think fruits!

here eric showcased with a cooking demonstration the motto think vegetables! think fruits! by preparing ‘fake tomatoes‘ as tomatoes are both vegetable and fruits: botanically a fruit and legally/culinary a vegetable. eric’s tomatoes with a twist consisted of a food pairing of fruit + vegetable: yellow beetroot, strawberries and pink peppers.

after the demonstrations the winners of the 2018 award were announced by frank fol, the initiator of this event, followed by an al fresco reception where we could enjoy all kinds of amuses and a dinner at and by ‘t hofke van bazel.

we congratulate all the winners of the 2018 awards, and the dutch winner in particular: librije’s zusje.

eric was invited for this event as the restaurant section of studio de culinaire werkplaats participated in the competition ‘the best vegetable restaurant 2010-2011’, and received as the first dutch restaurant this award.

to our regret winners are not allowed to participate in the competition again. however, there are enough ways to support this initiative.

eat’inspiration dutch masters III (june-sept 2017).

  • part of our project ‘dutch icons revisited’ in which we explore using regularly changing themes: what makes the dutch dna.

 

  • eat’inspiration dutch masters III. 
    • most people link the concept of dutch masters to our dutch golden age painters. however, we believe that we have far more master talents in the netherlands than painters only and in different periods. so we stretched the concept.
    • for this new series of dutch masters we created 7 dishes inspired by 7 different master talents. for instance: geert jan jansen (art forger + painter), iris van herpen (fashion artist/designer), etc.

 

  • in the image. a classic dutch pudding (vegan version) flambé. this dish is inspired by and a tribute to the project ‘where there is smoke’ by maarten baas.  
 

march 4 – may 16, 2016: eat’inspiration the new black

we are in the middle of a next step by opening in april 2016, a new venture: ‘The Storage Room’, a project space for food art. and besides a 5 course eat’inspiration guests can also book a VIP eating experience. 

a new step calls for an one of a kind theme. as being ‘the people of the black food’ we kick-off this period of change with BLACK.

on the menu a regularly changing selection of the collection of 20 dishes we have created for our guests. hereafter the first selection for the 5 course eat’inspiration, the selections for the other weeks we leave for this moment in the dark.

low salt press lunch @ world kidney day 2016

here a video impression of the press lunch we hosted for nierstichting nederland (read: dutch kidney foundation).

we were very pleased to receive an invitation by nierstichting to create and host a low salt 3 course press lunch. 

the nierstichting has invited a selection of bloggers and journalists on world kidney day 2016 to draw attention to the fact that most people are eating too much salt, about 1 kg on a yearly base too much. this is very harmful for your kidneys.

furthermore, nierstichting used this press lunch to launch ‘de zoutmeter’ (the salt meter), a handy tool that helps you to determine in a blink how much salt your meal contains.  

the briefing.

  • low salt has a negative association, most people think immediately in terms of ‘tasteless’
  • create a tasting for the invited press to find out which bites contain salt or no salt
  • create a 3 course lunch with adding salt to showcase that low salt can be tasteful
  • make recipes of the lunch dishes for 4 persons

lunch + tasting

  • tasting.
    • 5 preparations of potato (purée, baked, crisps, fried fries and boiled).
    • we choose the vitelotte noir, a black potato with a great deep purple inside and a nutty taste, to be the star of this tasting.
  • lunch.  in stead of salt we used in all the courses
    • some ingredients that have umami (the fifth taste)
    • a lot of fresh herbs and spices
    • and we paid attention to create various textures.
  • the 3 courses:
    • mushroom bouillon with vegetable dots.
    • marmered egg in a nest of potato, spinach and  bean sprouts
    • a small flower arrangement: a puff bread with a “bouquet” of marinated/roasted vegetables and baba ganoush
  • the recipes.
    • we are translating the recipes from dutch into english. as soon as the english version is available we will upload the pdf file here.

from march 21st spring is in the air, and very slowly nature is coming alive again. the eat’inspiration blooming is an exploration of growth in 5 dishes.

it starts with a seed, a bulb, a root, an egg and after some time -if the conditions are right- there is a beautiful plant, tree, animal or human in full glory.

blooming or flowering is one of the stages of growth. there are various types of growth, such as exponential, fractal or organic growth. besides a nutricious breeding ground also the environment determines whether something or someone can come to full bloom.

the phenomenon of growth and blooming is not limited to plants only. also organizations, people, societies, insights, ideas, etc. develop, grow and flourish in all sorts of ways.

for the easter special blooming, we randomly selected 5 aspects of growth and translated these aspects into 5 different courses (3x savourisch and 2x sweetish).

there are many different stories about the roots of valentine’s day. most of these stories are about anonymous, secret and/or forbidden love.

valentine’s day evolved into an occasion in which lovers expressed their love for each other by presenting flowers, offering confectionery, and sending greeting cards (known as “valentines“).

this year we go back again to the roots of valentine’s day to celebrate all kinds of love or in other words to celebrate love. we dedicate a whole weekend to the eating special from amsterdam with love, and make you experience the heart of amsterdam, the city of ‘free’ love, in 5 courses.

sneak peek: “less= more” high-end vegan workshop

pink parade part of eat'inspiration dutch treats??

at special request of our guests we are in the process of developing the workshop ‘less = more’,  a high-end vegan workshop (dutch & english spoken).

in this workshop we take dutch landscapes as a starting point and translate 5 typical dutch landscapes (shape, taste, texture, presentation, choice of ingredients). besides contemporary + traditional cooking techniques we also pay special attention to plating up dishes, share our knowledge about ingredients, and the art of eating.

the workshop is also interesting for those who like to cook with vegetables, fruits and grains, and would like to extend their cooking repertoire.

the workshop ‘less = more’ will take place once a month on a sunday afternoon from 14.00 – 18.00 hrs. we will publish all details and the dates in august on our website. per workshop we take max. 10 participants.
