for the press launch of a detox body treatment by filorga we were commissioned to create a food concept for the invited lifestyle press.

the brief. the concept had to be a combination of:

  • detox
  • black & white (referring to the brand identity of filorga)

the result. 

  • selection of black & white vegetable and fruit bites
  • matching white vegetable mocktail
  • plus various detoxing juices
  • presentation inspired by zen.

nov 23, 2014: chocomania @ SLA zuidas

chocolab chocomania @ sla zuidas amsterdam

we were invited by nina pierson, co-founder SLA (a chain of contemporary salad bars in amsterdam) to participate in the SLA lab programme. for which we created chocomania, a chocolab, in which pure & raw chocolate have the centerstage.

on a sunny sunday afternoon, november 23rd to be more precise, we hit the road for SLA zuidas amsterdam. at the very moment we were ready with all the preparations the enthousiastic participants for chocomania began to trickle in.

as a chocolate bar does not find its way to the shop shelves by itself we kicked off with the story of ‘from flower on a cacao tree to chocolate bar‘. after the introduction we invited the participants to a tasting of 5 different pure and raw chocolates, which they could score using chocolate tasting forms. it was great to exchange all kinds of thoughts & opinions.
hereafter we continued with another kind of tasting, a tasting of textures and combinations, and a demo of tempering chocolate, and some other contemporary techniques. chocomania did end with assembling & tasting a vegetable/chocolate dish.

we enjoyed the interesting questions, the discussions during the various tastings and demo.

for the kick-off of the project dutch icons revisited we randomly have selected 5 dutch landscapes. in the eat’inspiration anything but flat? we make typical dutch landscapes starring.

during this project we will be exploring in 5 dishes whether the netherlands is or is not ‘flat’. we start with some classics and we make you experience the wadden sea area, discover the hidden treasures of limburg or taste the urbanisation of the netherlands. during october we will introduce regularly “new” dutch landscapes.

in the context of the overall project dutch icons revisited  we will create  2 types of interpretations: abstract and eating experiences.

an eat’inspiration.

  • an eat’inspiration is a theme based journey in 5 courses: 3 times savourish and 2 times sweetish.

the challenge. we were invited to participate in a food art shoot, food & jewellery, for the 2nd edition of PUPMAG. #2, a cultural conceptual magazine.

the new luxuries.in our daily work as food conceptualists we focus on vegetables, fruits and specialty grains. every day we enjoy the beauty of these earthy gems. for us vegetables, fruits and grains are the jewellery, the new luxuries on the dinnerplate of the future. from this perspective it is rather logical to combine food & jewellery in a food art shoot.

the food art shoot. on may 16th, thamar lugthart (PUPMAG.) teamed us up with lonneke van der palen(photography), dineke van den heuvel (styling), frances krol (make up), frédérique olthuis (nails) and leonie op het eijnde (hand model).

PUPMAG. #2 is launched on june 19th, and in stores since july 20th, 2014. PUPMAG. issues 2 editions per year.

each july our eating experiences are inspired by our motto food = fashion and the summer edition of fashion week amsterdam. this year you can expect from us an outlook on fashion, or rather on haute couture, on coffee haute couture!

the contemporary way of producing, selecting, roasting, brewing and drinking coffee has the same allure as fashion. the renewed attention to the exotic coffee bean closely follows the current trend of fashion & interior: a penchant for the past and for foreign countries is reflected in all kinds of exotic designs and accessories. the revival of coffee has also led to the trendy coffee bars and the new profession of coffee sommelier.

wake-up, the eat’inspiration.

  • inspirational source: the coffee bean;
  • consists of five dishes: 3x savourish and 2x sweetish;
  • the 5 dishes of wake-up are inspired by our selection of 5 coffee producing countries, namely: costa rica, ethiopia, guatemala, brazil and sumatra;
  • in addition, we explore in wake-up 5 different single-origin coffee beans and you can experience at least 5 times a new perspective on coffee.
  • all our selected coffees consist of 100% arabica beans contain 70% less caffeine than robusta coffee beans.
  • please note: if you are not into coffee – please book the decaffeinated version.

wake-up, the limited edition.

may 11, 2014: lunch landscape for diesel day

diesel day lunch landscape

for diesel day we have created an edible landscape for lunch. we were invited for this commission by vice, organiser of this production.

the challenge: lunch; 240 people; four flags: switzerland, austria, germany and benelux, which are the countries of origin of the diesel day participants; and eyecandy.

the result: a 10-meters landscape, the heights of the landscape correspond to the heights of the various countries. the various colours of the flags determined the selection of fruits and vegetables. the stones refer to stone-washed jeans. in other words, food = fashion.

ongoing project: give peas a chance #03

give peas a chance is a ongoing project by de culinaire werkplaats, it is a call for more vegetables on our dinner plates, and especially more peas, beans and lentils.

this project had its kick-off in 2010 at rollende keukens, a festival for mobile kitchens and food trucks. the ingredients at that time: an army tank, a sound system playing the song ‘give peace a chance’ by john lennon, and great comforting green peas soup.

part of this project is a photography project by marjolein as well, illustrating the plant power of peas, beans and lentils. hereafter a small selection of this photo series.
