from march 21st spring is in the air, and very slowly nature is coming alive again. the eat’inspiration blooming is an exploration of growth in 5 dishes.

it starts with a seed, a bulb, a root, an egg and after some time -if the conditions are right- there is a beautiful plant, tree, animal or human in full glory.

blooming or flowering is one of the stages of growth. there are various types of growth, such as exponential, fractal or organic growth. besides a nutricious breeding ground also the environment determines whether something or someone can come to full bloom.

the phenomenon of growth and blooming is not limited to plants only. also organizations, people, societies, insights, ideas, etc. develop, grow and flourish in all sorts of ways.

for the easter special blooming, we randomly selected 5 aspects of growth and translated these aspects into 5 different courses (3x savourisch and 2x sweetish).

an eating special

  • always consists of 5 dishes: 3x savourish, 2x sweetish, and is preceded by a sneak preview, a dish that reveals something about the eat’inspiration.

there are many different stories about the roots of valentine’s day. most of these stories are about anonymous, secret and/or forbidden love.

valentine’s day evolved into an occasion in which lovers expressed their love for each other by presenting flowers, offering confectionery, and sending greeting cards (known as “valentines“).

this year we go back again to the roots of valentine’s day to celebrate all kinds of love or in other words to celebrate love. we dedicate a whole weekend to the eating special from amsterdam with love, and make you experience the heart of amsterdam, the city of ‘free’ love, in 5 courses.

many of our guests have indicated that they would like to follow a cooking workshop for home cooks with special attention to vegan dishes & the art of plating up at studio de culinaire werkplaats.

therefore we start in february 2016 with theme-based high end vegan cooking workshops for vegan, vegetarian home cooks and vegetable lovers.

as inspirational theme for the first high end vegan workshops we have selected dutch landscapes.

welcoming you with a non-alcoholic cocktail and bite. our workshops always start with an introduction of the menu. thereafter you will be preparing in groups of 2-3 persons three of the 5 dishes of the eat’inspiration dutch landscapes. the remaining 2 courses we will demonstrate.

you will learn and use both contemporary and traditional cooking techniques and preparation methods. furthermore we will pay attention to the importance of textures and flavours, and we will introduce several unusual flavour combinations.
and….. as we also eat with our eyes special attention will be paid to the plating up of the courses.

we end the afternoon or evening by dining together.

portfolio: dutch treats??

dutch treats??? is the 3rd eat’inspiration of our overall project dutch icons revisited, and is inspired by what happened at charlie hebdo in paris in january this year.

all of a sudden freedom of speech and tolerance became talk of the town.

the netherlands used to be well known all over the world for these notions. since the dutch golden age this country attracts all kinds of free spirits. but… times are changing, and also in the netherlands the climate is changing the last decades.

with dutch treats??? we explore in a rather playful way how we deal with freedom of speech and tolerance in the netherlands at this very moment.

therefore, we have selected 5 typical dutch issues that showcase the present dialogue or status on several sensitive matters.

the 5 dutch issues we addressed with our dishes were:

  • the black pete discussion. which since november 2014 has split up our country into two opponent parties.
  • tolerating. refers to the laws where the government looks away and depending the political climate the gray area is huge or small
  • pillarisation. showcasing the multi party system in the netherlands (about 16 political parties in parliament, and about 80 in the whole country), and since we ended this theme a few parties are added again.
  • canal parade. illustrating that the netherlands was the 1st country where the gay marriage was legalised
  • act normal. this is an important virtue in the netherlands, you should always remain the boy or girl from next door even though you are extremely successful or have special talents.

as we always receive a lot of guests from abroad, we had some very interesting conversations and insights how other countries deal with these -ad randomly selected- sensitive topics……

 

dutch quinoa

artvertisement dutch quinoa group

invited by PUP MAG. studio de culinaire werkplaats was involved in the concept & styling process of the artvertisement for the dutch quinoa group. we teamed up with nine ijff (photography), maaike beijer (make up), tommy hagen (hair styling) and vera van erp (model).

the dutch quinoa group is a collective that celebrates healthy food and dutch agriculture. and …. we want to join this party. let’s feast with their locally grown quinoa, a whole grain treat.

furthermore, we got the opportunity to experiment and explore the unique qualities of this dutch whole grain quinoa. for the launch party of the limited edition of PUP MAGAZINE #03 we created some fabulous vegan dutch quinoa croquettes with a spicy spinach dip. we choose spinach for this dip, as quinoa and spinach are close relatives.

 

 

mei 2011: jus de V – test

groenten bouillon

in may 2011  we introduced our jus de V to the public at fabulous food festival in haarlem. the reactions were overwhelming. jus de V is a rich vegetable jus without any animal ingredients and available at de culinaire werkplaats in the second half of september 2011 in a glutenfree version.
