sneak peek: “less= more” high-end vegan workshop
at special request of our guests we are in the process of developing the workshop ‘less = more’, a high-end vegan workshop (dutch & english spoken).
in this workshop we take dutch landscapes as a starting point and translate 5 typical dutch landscapes (shape, taste, texture, presentation, choice of ingredients). besides contemporary + traditional cooking techniques we also pay special attention to plating up dishes, share our knowledge about ingredients, and the art of eating.
the workshop is also interesting for those who like to cook with vegetables, fruits and grains, and would like to extend their cooking repertoire.
the workshop ‘less = more’ will take place once a month on a sunday afternoon from 14.00 – 18.00 hrs. we will publish all details and the dates in august on our website. per workshop we take max. 10 participants.

portfolio: exploring the versatility of freekeh for artisan grains.
commissioned by artisan grains, we had a demonstration to showcase the versatility of the green wheat freekeh for a group of food bloggers.
freekeh
freekeh is a green wheat. this is a cereal grain being harvested at the time when it is still young and green. freekeh therefore has a higher nutritional value compared to regular wheat grains. after harvesting the grains are lightly roasted, which gives a unique nutty and slightly smoky flavour. freekeh contains quite a lot of minerals, vitamins and proteins. furthermore, it has a very nice texture and bite.
cooking time is about 15 minutes.
the challenge. work out several dishes:
- to illustrate the versatility of the greenwheat freekeh
- and which are easy to make at home
the demonstration. we created a lot of dishes. of which we selected the following for the artisan grains’ greenwheat freekeh demonstration:
- mocktail with strawberries and freekeh
- freekeh buns with hummus.
- savoury and sweet freekeh croquettes
- nasi goreng of freekeh
- bonbons with a filling of freekeh and red fruits
- granola freekeh – dark chocolate bar.

invited by and in collaboration with frame store amsterdam we have created the 3-days only interactive food experience is life like a box of chocolates? this food experience is inspired by the works of anna lomax and here project ‘event now‘ in particular.
we have selected ad randomly 5 big and small aspects/moments of life and translated these together with several characteristics of anna lomax into 5 eat’impressions.
